Serves 4
1 tablespoon olive oil
1 zucchini, thinly sliced
1 carrot, thinly sliced
1 red pepper, sliced
small bunch broccolini, chopped
buk choy, chopped
1/3 cup low sodium vegetable stock
1/2 cup raw cashews
1 pack hokkien noodles, I used fresh noodles
For the Sauce:
3/4 cup water
1 tablespoon cornstarch
4 tablespoons soy sauce
2 tablespoons dark soy sauce
1 tablespoon sugar, I used raw brown sugar
fresh coriander, for serving
If using dry noodles, cook them according to the package directions, drain and set aside. Make the sauce by whisking all the ingredients together. Heat olive oil In a large frying pan or wok over medium heat. Add zucchini, carrots, peppers, broccolini, buk choy and vegetable stock. Cook for 5 minutes until veggies are tender. Add in noodles, cashews and pour in the sauce. Toss to combine and cook for another 5 minutes until the sauce thickens and the noodles look brown and glossy. Serve right away, garnished with fresh coriander and enjoy!
