Nacho Cheese–but close! Vegan recipe

Before I became vegan, I was a vegetarian for a long time because I could not see life without cheese. Now I know that cheese is full of fat, hormones, pesticides and pus and is cruel to mama cows, so I say no way, dairy cheese. The holy grail has been to find a vegan, whole food recipe that I like as well, or at least something that will taste great on veggies and potatoes. I have found it! I combined a bunch of plant-based cheese recipes, dumped the ones with oil or just with no flavor, and came up with what I think is a really yummy cheese sauce. Try it and see what you think!
2 c red bell pepper (raw or roasted. Try both ways–they taste a little different)
1 small or half a large SWEET onion
1 container Mori Nu Lite tofu
1 c rolled oats
2-3 T lemon juice
1 T miso paste
2 cloves garlic (I used 2 t granulated garlic)
1 T mild chili powder
1/2 c nutritional yeast

Put all ingredients in a high powered blender and blend until smooth. Enjoy on Mexican food, vegetables, or potatoes and enjoy your cheese again!
