Kudolife’s Healthy Chicken Curry Recipe for Weight Loss

3 oz chicken breast
1 tsp coconut oil
3/4 cup Basmati rice
¼ Red Pepper Sliced
¼ Green Pepper sliced
1 cup Bok choy shredded
¼ cup light coconut milk
1 tsp curry powder
1 tbsp onion
1 tsp minced garlic

1. Bring 3 cups of water to boil and add 3/4 cups rice

2. Reduce heat and continue to cook until rice is tender

3. Take 1 oz (1 medium) boneless Chicken Breast and cut it into strips

4. In a skillet add 1 tsp coconut oil and saute minced garlic and diced onion

5. Add chicken and stir fry on medium heat until lightly cooked through

6. Mix in peppers and continue to lightly stir fry for 3-4 mins

7. Add 1/4 cup light coconut milk

8. Mix in 1 tsp curry powder

9. Finally Add 1 cups bok choy shredded

10. Let simmer for 15 minutes

11. Serve on bed of Basmati rice
