2 c red bell pepper (raw or roasted. Try both ways–they taste a little different)
1 small or half a large SWEET onion
1 container Mori Nu Lite tofu
1 c rolled oats
2-3 T lemon juice
1 T miso paste
2 cloves garlic (I used 2 t granulated garlic)
1 T mild chili powder
1/2 c nutritional yeast
Put all ingredients in a high powered blender and blend until smooth. Enjoy on Mexican food, vegetables, or potatoes and enjoy your cheese again!
